Foolproof apple cake

    An easy recipe for apple cake, big enough to feed a crowd. Perfect for bake sales and great for using up a bumper crop of apples.

    Serves: 12 

    • 250g butter or margarine, at room temperature
    • 2 1/2 teaspoons vanilla sugar
    • 250g caster sugar
    • 5 eggs
    • 350g plain flour
    • 3 teaspoons baking powder
    • 1kg apples - peeled, cored and diced
    • 90g icing sugar, or as needed
    • hot milk, as needed

    1. Preheat oven to 180 C / Gas 4. Grease a large (25-28cm) cake tin and line with baking parchment.
    2. In a mixing bowl cream the butter, vanilla sugar and caster sugar. Beat in the eggs, one at a time, until the mixture is pale ad creamy. Sift in the flour and baking powder and mix well.
    3. Fold apples into the cake mixture. Spoon the mixture into the prepared tin.
    4. Bake for 40 to 50 minutes, until a skewer inserted in centre of the cake comes out clean. Take out of the oven and let cool completely.
    5. In a small bowl whisk together icing sugar and hot milk, a spoonful at a time, till a thick icing is reached. Spread or drizzle over the cake and set aside, until firm.

    Vanilla sugar

    Vanilla sugar is generally available in supermarkets nowadays, however, in a pinch substitute 1 teaspoon of vanilla extract to every 2 teaspoons vanilla sugar.
