Jaffa cake

    I've been wondering for ages, how to make a jaffa cake with orange glaze icing? Then I remembered my nan's mum's recipe my mum gave me. This is a lovely chocolate cake, which orange bursts out just at the end! I hope you enjoy!!

    Makes: 1 (20cm) cake

    • For the cake
    • 165g self-raising flour
    • 30g cocoa powder
    • 250g sugar
    • 2 eggs, lightly beaten
    • 170ml milk
    • 125g unsalted butter, melted
    • 1 tablespoon orange zest
    • For the icing
    • 125g icing sugar, sifted
    • 10g unsalted butter, softened
    • 1 teaspoon orange zest
    • 2 tablespoons orange juice

    1. Preheat the oven to 180 C / Gas 4. Lightly grease a deep 20cm round tin and line the base with baking parchment. Sift the flour and cocoa into a large bowl, then stir in sugar.
    2. Add the egg, milk, melted butter and 1 tablespoon of orange zest and beat with electric beaters for 2 minutes, or until well combined and smooth. Pour into the prepared tin.
    3. Bake for 45 to 50 minutes, or until a skewer inserted into the centre of the cake comes out clean. Turn out onto a wire rack and cool for 5 to 6 minutes.
    4. Whilst the cake's cooling, you can begin on the icing. Combine the icing sugar, butter, zest and enough of the juice to make a soft pouring consistency. Stand the bowl over a saucepan of simmering water and stir until the icing is smooth and glossy. Remove from the heat. Drizzle over the cake and let it run down the sides.

    Replaced 50mls milk with orange juice to make it bit more orangey. Was a bit heavy so want to try again. Tastes yummy.  -  12 Jul 2015
