Cheese filled beef patties

    These delicious cheesy patties are my kids' and husband's favourites. Serve with fried potatoes and a garden salad.

    Makes: 8 beef patties

    • 1 green pepper, finely diced
    • 1 roasted jarred red pepper, minced
    • 1 tablespoon minced sweet onion
    • 400g beef mince
    • 1 egg
    • 1 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 1 pinch ground nutmeg
    • 100g mozzarella cheese, diced
    • 1 tablespoon olive oil

    1. In a bowl combine green and red peppers, onion, beef mince, egg, salt, pepper and nutmeg. Mix well.
    2. With wet hands form 8 patties. Make an indentation with your thumb in the middle of each patty and fill with cheese. Cover cheese well with the beef mixture.
    3. In a large frying pan heat olive oil and fry patties on each side till brown and crispy on the outside and not longer pink on the inside, about 3 to 5 minutes from each side.
