Fluffy cake

    The best afternoon tea cake ever! Can be made on its own or with any available fruit: strawberries, blueberries, raspberries, blackberries, plums, bananas, apples, pineapple... the list is endless! I personally love the summer version with mixed berries. This recipe can be used to make individual muffins, too. Very simple and versatile recipe.

    Makes: 1 cake

    • 300g plain flour
    • 2 teaspoons of baking powder
    • 3 eggs
    • 300g sugar
    • 2 spoons of vanilla sugar
    • 150g butter, melted
    • 225ml soured cream

    1. Mix flour with baking powder and leave it to the side.
    2. Beat the eggs with sugar and vanilla sugar until smooth. Add melted butter, flour mixed with baking powder and soured cream.
    3. That's it, simple and easy. You can bake it plain or add any fruit you like. If you decide to add any fruit, mix the fruit with a tablespoon of flour so the fruit won't go down to the bottom of baking tray while baking. Tip the mixture into a greased and floured baking tin.
    4. Bake it in the preheated oven (200 C / Gas 6) for 30 to 40 minutes or until golden brown. If you are not sure, you can run a test with a wooden skewer - once it comes out dry you know your cake is properly cooked. It is quite hard to say how much time the cake should be in the oven as it varies a lot depending what fruit you add to it.
    5. Once the cake is cooled down, you can add some icing or leave it as it is, depending how sweet you like your cake. Don't forget to invite your family or friends and brew some tea. Enjoy!

    This turned out perfectly! I used the sponge recipe but added a few raisins into it which came out nice and fluffy but than adapted it a little by adding a lemon drizzle crust.......delicious 😊  -  25 Jun 2017
