Banana and peanut butter cake

    This banana and peanut butter cake is based on a milkshake ordered from the Cheesecake Factory® in Hawaii.

    Makes: 1 (20cm) square cake

    • 175g melted unsalted butter
    • 1 large banana, pureed
    • 1 1/2 tablespoons smooth peanut butter
    • 3 medium eggs
    • 150g brown sugar
    • 200g plain flour
    • 1/2 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1 tablespoon milk
    • Icing
    • 150g icing sugar
    • 1 teaspoon vanilla extract
    • 1 tablespoon milk

    1. Set the oven to 190 C / Gas 5. Cut a piece of baking parchment to fit in the bottom of a 20cm (8 in) square tin - do not need to line the edges.
    2. Melt the butter in the microwave for 30 seconds on 800 watts.
    3. Puree the banana with the peanut butter, melted butter and the eggs - in a blender for best results.
    4. Use an electric whisk to blend the banana mixture with the remaining cake ingredients. Tip the cake mixture into the prepared tin.
    5. Bake the cake for 30 minutes on the middle shelf.
    6. Turn out the cake onto a wire rack, the right way up.
    7. To glaze the cake, whisk together the three icing ingredients for a few minutes.
    8. Get a sillicone basting brush or pastry brush and slap on the icing all over the top and the sides when the cake is still slightly warm inside.

    Tasty cake but couldn't actually taste the peanut butter at all. Recipe also may benefit from some vanilla essence. I'm about to make it again but am doubling the peanut butter and adding vanilla essence...  -  17 Jun 2015
