Easy berry trifle

    Use your favourite fresh berries for this trifle recipe. Strawberries, blueberries, raspberries or a mix. The trifle has to chill for a few hours, but the preparation is very quick.

    Serves: 6 

    • 1 ready made sponge cake
    • 8 tablespoons orange juice or sherry
    • 600g mixed berries
    • icing sugar
    • 500ml milk
    • 2 tablespoons custard powder
    • 6 tablespoons creme fraiche
    • 500ml whipping cream
    • 2 to 3 teaspoons vanilla sugar

    1. Cut the cake into 3cm cubes and place them on the bottom of a large trifle dish. Pour sherry or orange juice on top and let soak.
    2. Set a few berries aside for garnish. Sweeten remaining berries with icing sugar to taste.
    3. Prepare custard with 500ml milk as instructed on the packet. Let cool down some, stirring occasionally. Stir in creme fraiche.
    4. In a bowl beat cream with vanilla sugar, until stiff.
    5. Layer berries on top of the cake, spread the custard over it and spoon the whipped cream on top. Cover and chill in the fridge for 2 to 3 hours. Garnish with reserved berries and serve.


    Make it even easier on yourself by using a tub of ready-made vanilla custard.
