Tomato rice with bacon

About this recipe: You can make something quite delicious with very simple and budget friendly ingredients. A great recipe, if you have to feed a few hungry kids, but didn't make it to the shops.

Serves: 4 

  • 100g bacon, diced
  • 1 large onion, chopped
  • 2 (400g) tins diced tomatoes
  • 100g rice
  • 250ml water
  • salt and pepper to taste
  • grated Parmesan cheese

  1. In a saucepan fry bacon, until it releases its fat. Add onion and fry, until onion is soft and lightly browned and bacon is crisp. Pour off the bacon fat.
  2. Add tomatoes with their juices, rice and water and give it a good stir. Add salt to taste and simmer covered for about 30 minutes, until rice is soft.
  3. Taste the rice and add more salt and pepper, if necessary. Spoon rice into a teacup, press down to tightly pack it and invert onto a plate. Sprinkle with Parmesan cheese and serve.


To make the inversion slightly easier and to prevent sticking inside the teacup, line the tea cup with clingfilm leaving plenty of overhang then grease very lightly prior to packing in the rice. When you are ready to invert over a plate use the cling film to help you ease it out.
