One pot pork chops with apples and sweet potatoes


    Everything for this dish is made in one pot: sweet potatoes, apples and pork chops are layered in a casserole dish and baked in the oven. Fresh or dried thyme is a nice addition to this dish. You can also add a glug of white wine along with the stock!

    Serves: 4 

    • 4 pork chops
    • salt and pepper, to taste
    • oil, for frying
    • 150ml vegetable stock
    • 3 small sweet potatoes, peeled and sliced
    • 3 small apples - peeled, cored and sliced

    1. Preheat oven to 190 C / Gas 5.
    2. Season pork chops with salt and pepper and brown in oil on both sides in a heavy casserole over medium high heat. Remove chops and set aside.
    3. Pour stock into the casserole and scrape the browned bits from the bottom with a wooden spoon. Layer sweet potatoes into the casserole, top with apples and finally add the pork chops.
    4. Cover and cook 20 minutes in the preheated oven. Uncover and cook for a further 10 minutes, until pork is no longer pink in the centre and potatoes and apples are soft.
