About this recipe: Grab your loved one and get together for a fun Mexican-inspired meal! These tacos are great for using up leftover beef and with the addition of kale are nourishing too.

Serves: 2 

  • oil, for frying
  • 100g cooked beef, diced
  • 200g kale, shredded
  • salt and pepper, to taste
  • 2 tablespoons soured cream
  • 2 teaspoons taco seasoning
  • 4 taco shells

  1. Heat a little oil in a large frying pan and fry beef for a few minutes to warm through. Add kale and cook and stir for a few minutes until wilted and soft, or to taste. Season with salt and pepper to taste.
  2. In a small bowl whisk together soured cream and taco seasoning.
  3. Distribute kale and beef evenly over the 4 taco shells and add a spoonful of soured cream mixture. Serve immediately.
