About this recipe: This spicy red pepper soup is packed with flavour and the prawns are a really lovely addition. Serve this soup chilled on a hot summer day.

Serves: 4 

  • 4 red peppers, seeded and coarsely chopped
  • 100ml water
  • 120ml soured cream
  • 1 teaspoon garlic granules
  • 1/2 teaspoon salt
  • hot sauce, to taste
  • 350g cooked prawns

Prep:10min  ›  Extra time:1hr chilling  ›  Ready in:1hr10min 

  1. In a food processor combine all the ingredients, except the prawns, and pulse until smooth.
  2. Chill in the fridge for at least 1 hour. Just before serving add the prawns and serve in a chilled bowl.
