Great recipe! I tweaked mine by using golden granulated sugar instead of castor and replacing 1 banana with glace cherries and a couple of table spoons of milk to keep the mix wet. Mine took a good 60 minutes to cook through (I popped some loose foil on the cake to stop it burning) and I sprinkled with demerara sugar for a sweet and crispy crust.
