Pre heat oven to 180 C / Gas 4. Grease and flour a 13x23cm loaf tin.
Combine bananas, flour, sugar, butter, vanilla, bicarbonate of soda and egg. Mix well (it will be lumpy from the chunky bananas) and pour into your tin. Sprinkle a little bit of sugar on top if you want a crunchy top.
Bake for 30 minutes in the lower middle of your oven for a moist, gooey bread or 40 minutes if you would prefer it a bit more firm. (I recommend the gooey option!)
Let it rest in the tin for a little while before cutting so it has some time to set. Enjoy!
Great recipe! I tweaked mine by using golden granulated sugar instead of castor and replacing 1 banana with glace cherries and a couple of table spoons of milk to keep the mix wet.
Mine took a good 60 minutes to cook through (I popped some loose foil on the cake to stop it burning) and I sprinkled with demerara sugar for a sweet and crispy crust.
