About this recipe: Simple, quick and tasty. Use up over ripe bananas to make the perfect banana bread. Doesn't get any easier or tastier than this! Perfect straight out of the oven, in a packed lunch or as toast!

Makes: 1 loaf cake

  • 4 ripe bananas, mashed
  • 200g plain flour
  • 200g caster sugar
  • 50g softened butter
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of bicarbonate of soda
  • 1 egg

Prep:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Pre heat oven to 180 C / Gas 4. Grease and flour a 13x23cm loaf tin.
  2. Combine bananas, flour, sugar, butter, vanilla, bicarbonate of soda and egg. Mix well (it will be lumpy from the chunky bananas) and pour into your tin. Sprinkle a little bit of sugar on top if you want a crunchy top.
  3. Bake for 30 minutes in the lower middle of your oven for a moist, gooey bread or 40 minutes if you would prefer it a bit more firm. (I recommend the gooey option!)


Let it rest in the tin for a little while before cutting so it has some time to set. Enjoy!

Great recipe! I tweaked mine by using golden granulated sugar instead of castor and replacing 1 banana with glace cherries and a couple of table spoons of milk to keep the mix wet. Mine took a good 60 minutes to cook through (I popped some loose foil on the cake to stop it burning) and I sprinkled with demerara sugar for a sweet and crispy crust. It was golloped down in a day! - 15 Sep 2013
