Broccoli, cheese and potato bake

    I made this recipe up. It's basically a cauliflower cheese with broccoli and potatoes added. This makes a filling and very nourishing dish for either lunch or dinner or can be used as a side dish.

    Serves: 4 

    • 2 tablespoons cornflour
    • 300ml (1/2 pint) milk
    • walnut sized knob of butter
    • 110g (4 oz) grated cheese
    • salt and pepper to taste
    • 225g (8 oz) broccoli
    • 225g (8 oz) potatoes

    1. For the sauce, stir cornflour into a little of the milk. When completely integrated add the rest of the milk and put onto a medium heat. Stir continuously until thickened. Add the butter and stir until melted. Add the cheese.
    2. Meanwhile, thoroughly wash the broccoli and remove all caterpillars. Put into a pan of boiling water and cook until the stalks are tender but not falling apart.
    3. Peel potatoes and cut into quarter inch slices. Cook in boiling water until just tender and drain.
    4. Grease a gratin dish and line with the potatoes. Put broccoli in the bottom and cover with the cheese sauce. If liked sprinkle a little more grated cheese on top.
    5. Bake in a preheated 180 C / Gas 4 oven for 15 minutes, or until bubbly and the top is golden brown.

    We made this but we added sexy bacon bits and mushroom and garlic, we made it deep and put bread crumbs and cheese on top. The whole family loved it and said can we have it again tomorrow. Thankyou!  -  22 Oct 2013


    Added sliced carrots, red onion, garlic and some leftover pork sausages. Sprinkled some oregano on the veggies and breadcrumbs on top with the cheese. Made the sauce as I would for mac. cheese: melt butter, add flour, add milk, add cheese, mustard and seasoning. (In oven now, but I'm sure we'll enjoy it.)  -  06 Apr 2017
