About this recipe: A simple yet delicious Italian potato salad made with 3 main ingredients: dark green kale, waxy potatoes and garlic. Serve warm.

Serves: 6 

  • 6 waxy or baby potatoes
  • 1 bunch (about 200g) kale or cavolo nero, washed and sliced
  • 1 teaspoon extra virgin olive oil
  • 2 cloves garlic, chopped
  • Pinch of salt

  1. Boil the potatoes until tender, about 15 minutes. Drain and set aside to cool.
  2. Boil the kale in salted water with 1 teaspoon of olive oil until tender, about 5 to 8 minutes. Drain and set aside.
  3. Heat 1 tablespoon of olive oil in a pan over medium high heat. Add the garlic and cook until golden. Stir in the kale and cook for 1 minute.
  4. Slice the potatoes and add to the pan. Heat gently, season with salt and serve.

We were expecting this to be bland and not very attractive, but it was beautiful enough to serve to guests, and so delicious that it is now on rotation for our everyday meals. - 14 Jan 2015


Great way of serving kale. Very tasty and quick to do. Used foremost first early potatoes. Served with chicken and gravy on top with the rest of the veg as side dishes. I used half a head of garlic -solent wight. - 27 Jul 2016
