About this recipe:
These savoury biscuits are lovely to serve at Christmas parties or to give as gifts. They freeze well too so you can make them in advance. Best to use a hard cheese with plenty of flavour such as Parmesan or Pecorino.
115g butter at room temperature
115g plain flour
115g grated Parmesan cheese
Pinch cayenne pepper

Preheat oven to 180 C / Gas 4. Lightly grease three baking trays or line with greaseproof paper.
Use an electric beater or fork to beat butter until light and creamy. Add flour, grated cheese, pinch of salt and cayenne; mix well.
Use a teaspoon to spoon small amounts of the mixture onto the trays. Try to leave plenty of space between each one (about 2.5cm) as they will spread. You'll probably fit about 10 on each tray.
Cook in preheated oven for 15 minutes, or until crisp and golden brown. Allow to cool on the tray before transferring to an airtight tin.
Everyone loved these biscuits, will have to double recipe I think next time!
