Rocket pesto

    A variation on the traditional basil pesto; rocket takes the place of basil and Pecorino cheese is also added. Rocket has a slightly bitter taste. If you want, you can dilute this pesto with a little water and also add caramelised onions and cherry tomatoes.

    Serves: 4 

    • 100g rocket
    • 50g grated Parmesan cheese
    • 50g grated Pecorino cheese
    • 50g pine nuts
    • 1 garlic clove
    • 1 pinch of salt
    • Extra virgin olive oil

    1. Place rocket, Parmesan, Pecorino and pine nuts in bowl of food processor. Add garlic clove, salt and a drizzle of olive oil. Start blending on low, continuously adding more olive oil until the mixture becomes creamy.
