Mussels are quickly cooked in white wine with lots of freshly ground black pepper and fresh parsley.

2 garlic cloves, chopped
1/2 glass of dry white wine
1 teaspoon freshly ground black pepper, or to taste
1 small bunch of parsley, finely chopped

Heat oil in large frying pan over medium heat. Cook the garlic until golden and softened. Add the mussels and cover with a lid. Add the white wine and a few spoonfuls of water every time the bottom of the pan becomes dry.
When all the mussels are open, sprinkling over lots of freshly ground black pepper. Place the lid back on and shake the pan so that the mussels mix with the cooking liquid.
Add the finely chopped parsley and serve with sauce drizzled over them.
