Pasta with tomato and cream sauce

    We call this 'Messed up pasta' in our house. Penne pasta mixed with a tomato cream sauce, topped with lots of Parmesan cheese.

    Serves: 4 

    • 400g tomato passata
    • 1 garlic clove, peeled
    • Extra virgin olive oil
    • Pinch nutmeg as needed
    • 200 ml double cream
    • Freshly grated Parmesan cheese
    • 450g penne pasta

    1. In a large saucepan, brown the garlic clove in a little oil; remove. Add tomato passata and cook at a low boil until thickened. Sprinkle a bit of nutmeg and stir in double cream. Let the cream reduce. You will have a thick tomato cream sauce. Add some grated Parmesan cheese at this time, to your taste.
    2. Cook the pasta according to packet directions. Drain and toss with the cream sauce. Serve with lots of grated Parmesan cheese.
