400g tomato passata
1 garlic clove, peeled
Extra virgin olive oil
Pinch nutmeg as needed
200 ml double cream
Freshly grated Parmesan cheese

In a large saucepan, brown the garlic clove in a little oil; remove. Add tomato passata and cook at a low boil until thickened. Sprinkle a bit of nutmeg and stir in double cream. Let the cream reduce. You will have a thick tomato cream sauce. Add some grated Parmesan cheese at this time, to your taste.
Cook the pasta according to packet directions. Drain and toss with the cream sauce. Serve with lots of grated Parmesan cheese.
