Smooth, rich, nutty fudge with a lovely honey flavour. If you don't like almonds, you can use any kind of nut you prefer. Makes a lovely gift for friends at Christmas.
Grease or line a 20x15cm (8 x 6 inch) tin. Set aside.
Place sugar, evaporated milk, butter and honey in large saucepan. Stir over low heat until sugar has dissolved.
Bring to the boil, stirring all the time, until it reaches 114 C or 240 F on a sugar thermometer.
Remove saucepan from heat and place on a cool surface; stir in chopped almonds. Beat with a wooden spoon until thick and creamy.
Pour into greased tin. When it has cooled slightly and begins to set, mark into squares. This will help you slice it more evenly when it has completely cooled.
