Mona's fruit cake

    An old recipe but foolproof. Plus it's easy to throw together in a hurry. You don't need to worry about exact quantities of sultanas or currants - just use whatever kind of dried fruit you like.

    Makes: 1 18cm cake

    • 225g (8oz) self raising flour
    • 1/2 teaspoon baking powder
    • 200g (7oz) soft brown sugar
    • 175g (6oz) soft margarine
    • 3 eggs
    • 2 tablespoons milk
    • 1/2 teaspoon salt
    • 525g (18oz) dried fruit
    • 50g (2oz) cherries

    Prep:15min  ›  Cook:1hr45min  ›  Ready in:2hr 

    1. Preheat the oven to 160 C / Gas 3. Lightly grease and line an 18cm (7inch) round cake tin.
    2. Add all the ingredients to a bowl and mix. Spoon the mixture in to lined tin. Bake for 45 minutes.
    3. Cover the cake with foil and lower the oven to 150 C / Gas 2. Continue cooking for 1 hour, checking regularly after that, until cooked.

    This was so easy to make. I soaked the fruit in a splash of Port for an hour, I also added some cinnamon, and some sugar on the top. Thank you Mona.  -  30 Nov 2017


    Have made two or three successfully, so easy. My latest is in the oven, and has sunk, but I used soaked fruit.  -  19 Dec 2015


    Followed recipe but it was nowhere near cooked. Then it sunk in the middle. Disappointing.  -  13 Oct 2015
