Sweet pastry

    If you use your mixer to make pastry - it's done in no time. Much easier and I always get good results this way. I use this pastry for mince pies every Christmas.

    Serves: 12 

    • 340g (12oz) self raising flour
    • 175g (6oz) butter
    • 40g (1 1/2oz) caster sugar
    • 1 egg yolk
    • 60ml (2 fl oz) cold water

    Prep:15min  ›  Extra time:30min chilling  ›  Ready in:45min 

    1. Place all the ingredients in the bowl of your mixer and turn on to slow speed.
    2. Gradually increase the speed until the pastry comes together in a ball.
    3. Remove, knead lightly and wrap in clingfilm. Cool in fridge for 30 minutes before using.

    Use for mince pies:

    Makes 21 mince pies. Halve the pastry and roll out in 2 batches. Cut out circles of pastry, fill with mincemeat and secure pastry tops with egg white.
