Pumpkin with maple syrup

    Roasted maple syrup pumpkin is a very simple recipe for a great autumn side dish and pairs really well with roast beef or chicken.

    Serves: 4 

    • 4 tablespoons maple syrup
    • 3 tablespoons olive oil, more to taste
    • salt, to taste
    • ground black pepper, to taste
    • 1kg pumpkin - peeled, seeded and diced

    1. Preheat oven to 190 C / Gas 5. Line a baking tray with aluminium foil.
    2. In a large bowl combine maple syrup and olive oil. Season with salt and pepper and stir well. Add pumpkin and toss to coat.
    3. Place pumpkin in a single layer on the baking tin and drizzle any remaining oil-maple mixture from the bowl on top.
    4. Roast for about 45 minutes, until the pumpkin is soft. About half way through, turn pumpkin pieces with a fork. If they stick, carefully loosen them with a spatula. Remove from the oven and serve hot.
