Italian stuffed peppers

    A traditional Italian, colourful, tasty dish. Stuffed peppers can be served as side dish or as a main.

    Serves: 4 

    • 5 medium peppers
    • Pinch of salt
    • 3 slices of bread, torn
    • 2 tablespoons of cold milk
    • 400g beef mince
    • 3 tablespoons freshly chopped flatleaf parsley
    • 1 egg
    • 2 tablespoons extra virgin olive oil
    • 50g grated Parmesan cheese
    • Pinch freshly ground black pepper

    1. Preheat the oven to 180 C / Gas 4. Lightly grease a deep sided baking tray with a little olive oil.
    2. Cut the tops off peppers; remove all the seeds and white membranes. Wash them and set aside. Sprinkle some salt inside the peppers.
    3. Soak the bread in cold milk; stir in mince, parsley, egg, oil Parmesan cheese and freshly ground black pepper. Mix well.
    4. Fill each pepper with the mince mixture. Arrange them side by side on baking tray. Cook for 50 minutes. Serve warm, not hot.

    I just loved this receipe, it was simple and so easy to make and better still used common pantry ingredients. I also added some fine chopped red onion. Will certainly be making this recipe again.  -  22 Sep 2012


    Love this recipe, I used minced turkey,then another time I used minced chicken as I can't have red meat,also added minced veg and herbs and chilli oil to soak the bread as I can't have milk,they were so delicious and so easy to make,also my sister inlaw and partner are veggie so I used quorn for them they loved them so have gave them the recipe and allspice app.  -  13 Jan 2016
