This spaghetti and garlic cream pasta dish is simple, quick to make and hits the spot when you need something in a hurry.

Ingredients

500g spaghetti
75g bacon, diced
4 to 5 garlic cloves, thinly sliced
1 tablespoon oil
1 tablespoon plain flour
250ml vegetable stock
200g single cream
salt and pepper, to taste
1 bunch fresh parsley, chopped
50g grated cheese

Bring a saucepan of salted water to the boil and cook the spaghetti as instructed on the packet, or until al dente. Drain and set aside.
Meanwhile fry the bacon in a frying pan until crispy. Add the garlic and cook and stir for a few minutes. Remove the garlic and bacon from the frying pan, keeping the bacon fat in the pan, and set aside.
For the sauce, warm the oil in the same pan that the bacon was cooked in then sprinkle the flour in and stir for a minute until golden brown. Pour in the stock and cream, whisking constantly. Simmer for 10 minutes, season with salt and pepper to taste. Add spaghetti and stir to coat.
Transfer spaghetti to a warm serving bowl, sprinkle with bacon, garlic, parsley and cheese and serve immediately.
