Oven baked chicken with a tomato sauce

    Known as Pollo alla pizzaiola in Italy, this is my Gran's recipe - the photo is proof of that. Don't be tempted to turn the chicken, just put it in the oven for 3/4 of an hour and forget about it! That way, it'll come out lovely and moist.

    Serves: 4 

    • 2 tablespoons extra virgin olive oil, divided
    • 375g chicken pieces
    • Salt (about 1 or 2 tablespoons)
    • 2 cloves garlic, minced and divided
    • 4 tablespoons freshly grated Parmesan cheese, divided
    • 1 ½ tablespoons dried parsley, divided
    • 1 ½ tablespoons dried basil, divided
    • 400g fresh tomatoes; peeled, seeds removed and diced

    1. Preheat the oven to 180 C / Gas 4.
    2. Add 1 tablespoon olive oil to a casserole or deep sided baking dish; toss the pieces of chicken in the dish so they are coated in oil. Sprinkle with salt, half of the minced garlic, 2 tablespoons Parmesan cheese and half of the dried parsley and basil.
    3. Crush the tomatoes with a fork in a medium bowl; stir in remaining dried parsley and basil, grated Parmesan, diced garlic and olive oil. Spoon this mixture over the top of the chicken pieces and bake in preheated oven for 45 minutes.

    I noticed this recipe when I ran a search on Google looking for "chicken breasts in tomato sauce"....after reading many other recipes...this one stood out....easy to make anyone could make it and it tastes great. I will definitely make this dish again. The only change I made was, I love onions so I added a few for taste.  -  16 Sep 2013
