Ingredients
Makes: 15 cookies
- 110g soft brown sugar
- 100g caster sugar
- 110g butter
- 1 egg, beaten
- 1/2 teaspoon vanilla extract
- 130g peanut butter
- 190g plain flour
- 1 teaspoon bicarb of soda
- 1/4 teaspoon salt
- 175g white chocolate chips (or chopped white chocolate)

- Preheat oven to 190 C / Gas 5. Lightly grease 2 baking trays.
- In a large mixing bowl, combine brown sugar and caster sugar and then rub in the butter.
- Add the egg, vanilla extract and peanut butter, mixing well after each addition.
- Sift the flour, bicarb and salt into the mixture, add the white chocolate chips and stir.
- Form the mixtures into balls, and flatten with the back of a fork and place on baking trays.
- Bake in the oven for 12-15 minutes until cookies are golden brown.

Make these all the time and they don't last the night! They're delicious straight out the oven but chewy and gorgeous when cool (if you can wait that long!). - 13 Jan 2014
