About this recipe: I really like carrot soup, because it is easy and quick to make, delicious and healthy. I added some coriander for a fresh taste.

Serves: 4 

  • 50g (2 oz) butter
  • 450g (1 lb) carrots, chopped
  • 1 large onion, chopped
  • 1 clove garlic, chopped
  • 1 teaspoon ground coriander
  • 2 tablespoons plain flour
  • 600ml (1 pt) vegetable stock
  • 1/2 teaspoon nutmeg
  • 1 tablespoon fresh coriander
  • 150ml (1/4 pt) single cream
  • salt and pepper to taste

  1. Melt the butter in a large saucepan. Add the carrots, onion, garlic and ground coriander, and cook for 5 minutes until the carrots begin to soften.
  2. Stir in the flour and cook for another 5 minutes.
  3. Add the vegetable stock, and simmer on a low heat for 20 minutes.
  4. Add in the nutmeg and fresh coriander, then puree the soup in a blender or with a handheld mixer.
  5. Stir in the cream, and season with salt and pepper if needed.
