Italian lasagne, my mum's style

    This recipes has been in my family forever. It reminds me my childhood more than anything else.

    Serves: 6 

    • 1 litre Bolognese sauce, not too thick
    • 600g lasagna sheets
    • 300g grated Parmigiano cheese
    • 300g mozzarella or scamorza cheese, sliced

    1. Heat the oven at 200 C / Gas 6.
    2. In a large and not too deep dish, pour some Bolognese sauce in the bottom.
    3. Add a layer of lasagne sheets, covering the surface of the dish. Cover it with Bolognese sauce, some mozzarella or scamorza cheese, and top it with some Parmigiano.
    4. Make a second layer using the same technique (first the lasagne sheets, then the sauce, the mozzarella and the Parmigiano on top). For the third layer, add the lasagne and the sauce and top it with a generous amount of Parmigiano so you cover all the layer.
    5. Put in the oven for 45 minutes, checking time to time. Then move the lasagne to the top rack of the oven and set the grill for 5 to 7 minutes.
    6. Let it rest for 5 minutes and serve warm.


    In this recipe the pasta is raw so the sauce needs to be quite watery to allow the lasagne sheets to cook in it while in the oven. If you have a thick Bolognese sauce you can quickly boil the lasagne sheets before assembling the lasagne. Just don't make it cook more than 3 minutes, otherwise once out of the oven they will be overcooked.
