Individual strawberry Pavlovas

    Those little Pavlova cakes make a great and pretty dessert. When you bake them individually, you cannot break or mess up the slices, when serving.

    Serves: 8 

    • 3 egg whites
    • 170g (6 oz) caster sugar
    • 1 teaspoon vanilla extract
    • 1 teaspoon raspberry vinegar
    • 340g (12 oz) fresh strawberries
    • 425ml (3/4 pt) whipping cream, whipped

    1. Preheat the oven to 220 C / Gas 7.
    2. Line a baking tray with greaseproof paper, marking out eight 18cm (7 in) circles.
    3. Whisk egg whites until standing in peaks, add in half the sugar and whisk again until stiff.
    4. Fold in the rest of the sugar, and add the vanilla and vinegar.
    5. Divide the mixture into 8 and place inside the circles. Make hollow in the centre and build up around the sides.
    6. Place in oven and turn down temperature to 140 C / Gas 1. Cook for 1 1/2 hours until the outside is crisp and the paper peels easily away from base. Remove and leave until cold.
    7. Just before serving, pile centre with half the strawberries, top with whipped cream and decorate with the rest of the strawberries.
