    About this recipe: Great and easy recipe for delicious lemon squares. Enjoy with your afternoon tea or as a tasty dessert.

    Makes: 16 squares

    • 170g (6 oz) butter or margarine
    • 170g (6 oz) caster sugar
    • 2 eggs
    • 170g (6 oz) self-raising flour
    • grated lemon zest
    • For the top
    • 1 lemon, juiced
    • 110g (4 oz) icing sugar

    1. Preheat oven to 175 C / Gas 3 1/2. Lightly grease a 35x23cm (14x9 in) tin.
    2. Cream butter and sugar, and beat in the eggs. Fold in the flour and lemon rind.
    3. Pour mixture into tin and smooth over the surface. Bake in oven for 40 minutes, until surface is soft and slightly golden.
    4. Take out of oven and leave to cool. Mix the icing sugar with the lemon juice.
    5. When cool, spread the icing over the surface and leave to set. Cut into squares.
