Peanut butter cookies with oats

    I make my peanut butter cookies with oats and orange rind. They do taste a little lighter that way and the kids love them.

    Makes: 18 cookies

    • 60g (2 oz) porridge oats
    • 110g (4 oz) self raising flour
    • 60g (2 oz) soft brown sugar
    • 60g (2 oz) butter or margarine
    • grated rind of 1 orange
    • 2 tablespoons smooth peanut butter
    • 1 tablespoon golden syrup
    • 2 tablespoons milk

    1. Preheat oven to 190 C / Gas 5.
    2. Mix oats, flour and sugar in a large bowl. Cut butter into small pieces and add to mixture. Rub in fat until mixture resembles breadcrumbs. Stir in orange rind and make a well in the centre.
    3. Place peanut butter, syrup and milk in the well and mix.
    4. Divide into 18 pieces and roll into balls. Place on greased baking trays and flatten slightly with a fork dipped in cold water.
    5. Bake for 10 to 15 minutes until golden brown.

    Other ideas:

    Also tastes good with lemon rind instead of orange rind.

    Very good recipe, I used gluten-free ingredients and the cookies turned out really well. I agree they are a bit chewy due to the peanut butter but that works out very well for a GF version, as GF biscuits can often be too dry. I will certainly make these again.  -  16 Mar 2015
