Cherry coconut cake

    I love the taste of cherry and coconut together. This is my easy cake recipe, I make, when cherries are in season.

    Makes: 1 cake

    • 170g (6 oz) self raising flour
    • 110g (4 oz) margarine
    • 170g (6 oz) sugar
    • 60g (2 oz) desiccated coconut
    • 2 eggs, beaten
    • 110g (4 oz) cherries, stones removed

    Prep:10min  ›  Cook:1hr  ›  Ready in:1hr10min 

    1. Preheat oven to 185 C / Gas 4 1/2.
    2. In a bowl rub margarine into flour. Add sugar, coconut and eggs and mix well. Stir in cherries. Tip into a cake tin.
    3. Bake for 1 hour, until a skewer inserted in the centre comes out clean.

    I used 200g of cherries and cook in a loaf tin. The cake tasted nice but all the cherries sank to the bottom. What would cause this?  -  10 Mar 2015
