About this recipe: An old fashioned dense fruit loaf that I started making back when dates came in blocks! It's best served with a cup of piping hot tea. Buttered or not buttered is up to you!

Serves: 12 

  • 175g (6 oz) dates, chopped
  • 4 tablespoons boiling water
  • pinch bicarbonate of soda
  • 75g (3 oz) cooking margarine
  • 75g (3 oz) brown sugar
  • 1 egg
  • 175g (6 oz) plain flour
  • 75g (3 oz) chopped walnuts

  1. Preheat oven to 170 C / Gas 3. Grease and flour a 23x13cm loaf tin.
  2. In a large bowl, combine chopped dates and boiling water. Add a pinch of bicarbonate of soda and stir well; let stand for 15 minutes.
  3. Cream together margarine and sugar until light and fluffy. Stir in the egg, flour and walnuts; add to the date mixture and mix until well combined. Pour into the prepared tin.
  4. Bake in the preheated oven until a skewer inserted into the centre of the loaf cake comes out clean, about 60 minutes. Let cool in the tin for 10 minutes then turn onto a wire rack to cool completely.
