Pasta with gorgonzola and spinach

    This is a super quick vegetarian pasta dish. Gorgonzola cheese makes for a great pasta sauce and pairs very well with spinach.

    Serves: 4 

    • 400g pasta, of your choice
    • 20g butter
    • 2 shallots, finely diced
    • 250ml single cream
    • 125g fresh spinach
    • 75g Gorgonzola cheese
    • salt and pepper, to taste

    1. Bring a large saucepan of salted water to the boil and cook the pasta, according to the instructions on the package, or until al dente.
    2. Meanwhile melt the butter in a frying pan and cook and stir the shallots. Pour in cream and simmer until reduced (about 8 minutes). Add spinach and cook until wilted. Crumble in cheese, season with salt and pepper.
    3. Drain the pasta and add to the sauce. Mix and serve immediately.
