Indian vegetable pakoras

    Make your own tasty pakoras at home for the perfect prelude to curry night. Yummy pakoras can be made with a plethora of vegetables - feel free to use your favourites.

    Serves: 6 

    • 2 small potatoes
    • 2 red peppers, finely chopped
    • 100g frozen peas, thawed
    • 1 small onion, grated
    • 1 small bunch fresh coriander, finely chopped
    • 1 tablespoon lemon juice
    • 2 teaspoons garam masala
    • 1 pinch asafoetida
    • 1 teaspoon baking powder
    • 225g gram flour (chickpea flour)
    • 1 pinch cayenne pepper
    • salt to taste
    • vegetable oil for frying

    1. Boil unpeeled potatoes in a saucepan with salted water, until soft, when pricked with a fork. Peel and mash.
    2. In a bowl mix red pepper, peas, onion, coriander, potatoes and lemon juice.
    3. In a frying pan heat a little bit of oil and fry garam masala and asafoetida until fragrant, but not dark.
    4. In another bowl mix gram flour and baking powder and gradually stir in cold water, until a smooth, but not runny batter forms. Mix in vegetables, spices and salt to taste.
    5. Heat vegetable oil in a frying pan and add 2 tablespoons of the batter for each pakora and fry, until crisp and brown on each side. Set on a plate lined with kitchen paper to absorb excess oil.


    Pakoras taste best hot or warm, but you can reheat them fairly easy in the microwave or under the grill if you make them ahead.
