Miniature meatloaves

    Make these mini meatloaves for a family friendly supper, and freeze any extras for a quick homemade meal another day!

    Makes: 8 mini meatloaves

    • 1 egg
    • 175ml milk
    • 110g grated Cheddar cheese
    • 40g porridge oats
    • 1 teaspoon salt
    • 450g beef mince
    • 10 tablespoons tomato ketchup
    • 4 tablespoons dark brown soft sugar
    • 1 1/2 teaspoons mustard

    1. Preheat oven to 180 C / Gas 4.
    2. In a large bowl, combine the egg, milk, cheese, oats and salt. Add the mince, mixing well, and form this mixture into eight mini meatloaves. Place these in a lightly greased baking dish.
    3. In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
    4. Bake, uncovered for 45 minutes.

    Freezing tip

    Freeze these mini meatloaves either before or after baking. If after baking, allow the meatloaf to come to room temperature, then wrap well in cling film and then foil.

    Excellent recipe! Will definitely be making these mini meatloaves again. Easy and very quick to make. I did substitute the 4 tablespoons of dark sugar with 2 as I prefer a more tangy sauce.  -  21 Nov 2012


    Brilliant! Wasn't sure about the oats but these were lovely. I made double and froze the others. Will definitely enjoy these later, and they're so easy to freeze. Don't have to worry about slicing the meatloaf and falling apart!  -  29 Oct 2012


    Even my fussy 12 year old daughter loved these. I didn't put as much sugar in as the recipie said and we still found them a tad sweet so will use even less next time. Came out beautiful and dark brown. Served with garlic roast new potatoes and noodles for kids salad for me and dad.  -  25 Sep 2015
