About this recipe: A small tin of crushed pineapple, dried mixed fruit and glace cherries are heated up with butter and sugar, then mixed with flour and eggs to create a moist fruit cake.

Serves: 8 

  • 175g (6 oz) margarine
  • 175g (6 oz) brown sugar
  • 450g (16 oz) dried mixed fruit
  • 110g (4 oz) glace cherries
  • 1 small tin crushed pineapple
  • 175g (6 oz) self-rising flour
  • 2 eggs

  1. Preheat the oven to 170 C / Gas 3. Lightly butter and flour a loaf tin.
  2. In a small saucepan over high heat, bring margarine, sugar, dried mixed fruit, cherries and crushed pineapple to the boil. Reduce heat to low and simmer for 15 minutes; allow to cool.
  3. When the fruit mixture is cool, add the eggs and flour, beating well. Pour mixture into prepared loaf tin.
  4. Bake in the preheated oven until a skewer inserted into the centre of the loaf comes out clean, about 2 hours.

Easy & delicious, made three times now. 1st as the recipe, 2nd without cherries (meant to add walnuts with eggs & flour but forgot), 3rd time with walnuts instead of cherries - yet to sample but am sure will be perfect for me! - 13 Aug 2016
