Creamy pasta al pesto

    Ultimate comfort food without you having to feel majorly guilty cause hey it's got some nice healthy veg in there!

    Serves: 4 

    • 400g penne pasta
    • broccoli (as desired)
    • 250ml cream
    • 2 tablespoons basil pesto
    • 1 handful shredded spinach
    • 1 small jar sun blush tomatoes
    • 50g grated Parmesan cheese
    • 1 handful pine nuts

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Boil the penne pasta til al dente.
    2. While the pasta is boiling, steam or boil the broccoli until it suits your liking.
    3. Once both are ready combine them into a saucepan and add the cream and pesto, stirring gently. Cook on a medium heat until cream starts to thicken.
    4. Add the tomatoes, spinach and 35g of Parmesan and continue to stir for another minute or two.
    5. When the cream has thickened add pine nuts and the rest of the Parmesan. Serve straight away with some crusty bread.


    I'm not very technical when it comes to cooking but this recipe is so simple you can fiddle about with the amounts til you get the right taste for you.
