About this recipe: Known as Piccata di pesce in Italy, this is a deliciously light fish dish that's ready in under 15 minutes.

Serves: 4 

  • 450g sole fillets
  • 2 tablespoons flour, for dredging
  • 75g butter
  • Juice from 1 lemon
  • 4 tablespoons water
  • 2 - 4 tablespoons capers
  • 1 tablespoon butter
  • 1 tablespoon freshly chopped flatleaf parsley
  • Salt, to taste

  1. Sprinkle flour on plate; lightly coat both sides of each fish fillet with flour.
  2. Melt butter over medium heat in a large frying pan. When the butter is just starting to brown, add the fillets and cook for 1 or 2 minutes on each side, taking care to only turn them once. They should be a nice golden brown. Carefully remove the fillets from the pan and set them aside on a plate. Cover the plate to keep them warm.
  3. Combine lemon juice and water; pour into pan. Add capers, and 1 tablespoon butter. Cook until the sauce has slightly reduced. Season with salt. Stir in parsley and add fish fillets back into pan to warm through before serving.

Very tasty! Only one recommendation I would not return the fish to the source to warm before serving. Try placing in a preheated oven to keep warm at 90 degrees and pour the sauce over each portion.👍 - 17 Jan 2016


I used plaice fillets instead of sole and lime juice instead of lemon. Quick easy restaurant quality food. Thanks for the recipe. - 11 Aug 2014
