Grilled aubergine and halloumi supper

    Tasty, quick supper. Serve with couscous or a side salad. The aubergine is marinated in a tasty mixture before being grilled with the halloumi.

    Serves: 4 

    • 1 aubergine
    • 200g halloumi
    • Marinade
    • 1/2 tablespoon soya sauce
    • 1/2 tablespoon maple syrup (or honey)
    • 1 tablespoon balsamic vinegar
    • 1 tablespoon olive oil
    • 1 clove garlic, crushed
    • 1 pinch cayenne pepper

    Prep:5min  ›  Cook:10min  ›  Extra time:10min marinating  ›  Ready in:25min 

    1. Mix all the marinade ingredients together. Thinly slice the aubergine and put in the marinade, coating thoroughly. Leave for 10 to 15 minutes.
    2. Remove the aubergine from the marinade, and set the marinade to one side. Grill the aubergine slices and halloumi on both sides for 10 to 12 minutes until cooked through and brown. (You can barbecue or griddle as well.)
    3. Serve drizzled with the leftover marinade.

    So easy to make and tasted great! No soy sauce so added a tsp of bovril... Have also used courgettes and mushrooms, still tasty.  -  12 Aug 2015
