Incredibly gooey chocolate brownies

    I've decided to accept that although my brownies never look the most appealing - they always taste delicious. These extremely chocolaty, fudgy brownies, which are crisp on top, are amazing. They are best eaten with a fork!

    Makes: 24 brownies

    • 100g dark chocolate, broken into pieces
    • 50g milk chocolate, broken into pieces
    • 50g white chocolate, broken into pieces
    • 50g margarine
    • 150g caster sugar
    • 100g golden caster sugar
    • 50g dark muscovado sugar
    • 3 large eggs, beaten
    • 1 teaspoon vanilla essence
    • 75g plain flour, sifted
    • 1 teaspoon baking powder

    1. Preheat the oven to 180 C / Gas mark 4. Grease and line a 20cm square baking tin with greaseproof paper.
    2. In a pan over low heat, melt the dark, milk and white chocolates and butter, stirring constantly until melted.
    3. Whisk the eggs and sugars together in a large bowl until thick and light in colour. Stir in the melted chocolate and vanilla essence. Gently fold in the flour and baking powder, mixing until just combined; pour the mixture into the prepared baking tin.
    4. Bake in the preheated oven until the brownie has set up but is still moist in the centre, 30 to 40 minutes.

    Cook's Note

    If you don't have muscovado sugar, use additional golden caster sugar.
