About this recipe: Try this for a flavoursome light lunch! I called it "pitza" because it's pizza style, but uses pitta bread. It's super simple and tastes great! You're probably thinking ah but smoked salmon is so expensive - but it doesn't have to be. If you're a student like me, then buying smoked salmon trimmings for about 90p is worth it! You can use them for pizza toppings, scrambled eggs, salads, etc.

Serves: 1 

  • 1 large wholemeal pitta
  • 2 tablespoons cream cheese
  • Pinch of mixed dried herbs
  • 100g smoked salmon, cut into strips
  • 1/4 cucumber, sliced

Prep:5min  ›  Ready in:5min 

  1. Toast the pitta in a toaster or under the grill until golden brown and crisp.
  2. Spread the cream cheese on to the toasted pitta, sprinkle with herbs and top with smoked salmon. Serve with sliced cucumber.


If you want this for dinner instead of lunch, then you could fry up some onions to add on top, make a big salad to go with it, and have two pitza's instead of just one!
