Apricot, ginger and chicken casserole

    A very aromatic and special chicken casserole with apricots, fresh ginger and a hint of lemon and orange.

    Serves: 4 

    • 4 chicken breasts, sliced
    • oil as needed
    • 150g dried apricots
    • 1 onion, finely chopped
    • 2 cloves garlic, crushed
    • 2 tablespoons grated root ginger
    • grated zest of 1 lemon
    • 1 tablespoon thyme
    • 60ml lemon juice
    • 120ml orange juice
    • 2 tablespoons brandy
    • 240ml chicken stock
    • 3 tablespoons cornflour

    1. Preheat oven to 180 C / Gas 4.
    2. Cook chicken in a little oil in a large frying pan until no longer pink inside.
    3. Remove chicken from pan and place in a casserole dish. Add apricots.
    4. Place onion, garlic, ginger and lemon zest in the pan and saute for a few minutes. Stir in the thyme, brandy, stock and cornflour.
    5. When mixture boils and thickens, pour over chicken and apricots.
    6. Place in the oven and bake for about 20 minutes.
