Mary's smoked mackerel pate

    I make this mackerel pate as a dip with crackers, when I have guests. It keeps them satisfied and gives me time to finish the main dish.

    Serves: 8 

    • 2 to 3 smoked mackerel
    • 1 pinch ground mace
    • 85g (3 oz) well creamed butter
    • 225g (½ lb) curd cheese
    • ground black pepper to taste
    • a little lemon juice or 1 to 2 drops hot sauce
    • melted butter to cover

    1. Remove skin and bones and pound mackerel and mace to a smooth paste.
    2. Work in butter and curd cheese and season with pepper, lemon juice or hot sauce to taste.
    3. Fill in a container and cover with melted butter.

    Make ahead:

    The pate freezes well.
