Pesto mash

    This mashed potato was deliciously creamy and rich, despite not having any cream or crème fraiche in it. I decided to use pesto because I've had pesto and Cheddar on a jacket potato before and it was so yummy, so I knew that it would taste good in mash as well. It's amazing that just by adding a few dollops of green pesto, you can transform an ordinary mash into something delicious and luxurious! You should definitely try this if you like pesto.

    Serves: 2 

    • 450g potatoes, peeled
    • 2 tablespoons skimmed-milk
    • Knob of butter
    • Pinch of salt
    • 90g green pesto
    • 50g grated Cheddar cheese
    • Salt and freshly ground black pepper, to taste

    1. Place potatoes in a large pot and cover with water. Cover and bring to the boil; boil until very tender, about 15 to 20 minutes.
    2. Drain potatoes and return to pot. Add milk, butter and salt; mash until light and fluffy. Stir in pesto and Cheddar cheese; add more milk or butter if desired. Season to taste with salt and pepper.
