Mary's lemon pudding

    Lemon is my favourite flavour when it comes to sweets and baked goods. This is the recipe for my delicious lemon pudding.

    Serves: 4 

    • 110g (4 oz) butter
    • 110g (4 oz) caster sugar
    • 110g (4 oz) self raising flour
    • 2 lemons, juiced and zested
    • 4 eggs, separated
    • 300ml (1/2 pt) milk
    • icing sugar to decorate

    1. Preheat oven to 180 C / Gas 4 and butter a deep 15cm (6 in) soufflé dish.
    2. Cream the butter and sugar, and add the flour, lemon juice, zest, egg yolk and milk. Mix to a batter (may separate slightly).
    3. Whisk egg whites until stiff and fold into the mixture.
    4. Pour into the prepared soufflé dish. Set the dish in a tin lined with a damp tea towel, and pour hot water from the kettle halfway up the sides of the dish. Carefully place in oven.
    5. Bake for 45 to 50 minutes. Serve hot dusted with icing sugar.

    I have 4 lemon trees and 3 chickens and it's spring. I'm going to try this recipe tomorrow. Would of loved to see a photo of the pudding though.  -  11 May 2015
