Mary's hot cross buns

    It takes some time to make this classic Easter treat, but they are so worth it. My family loves them.

    Makes: 12 buns

    • 15g (1/2 oz) dried active baking yeast
    • 1 pinch of salt
    • 300ml (1/2 pt) milk
    • 50g (2 oz) butter
    • 50g (2 oz) sugar
    • 450g (1 lb) warmed strong white bread flour
    • 2 teaspoons salt
    • 110g (4 oz) currants
    • 2/3 teaspoon mixed spice
    • 50g (2 oz) mixed peel

    1. In a large mixing bowl, combine the yeast, 1 pinch salt and half of the milk. Leave in a warm place until it becomes frothy.
    2. Gently heat the rest of the milk in a small pan, then remove from the heat and add the butter and sugar.
    3. Mix 2 teaspoons salt with flour, put into bowl and make a well in the centre. Pour the yeast mixture and milk mixture into the well.
    4. Add currants, spice and peel and mix well, adding up to 110g (4 oz) more flour if necessary (an egg may be added if liked).
    5. Put into a warm place and cover. Leave to rise for about 2 hours. Shape into 12 buns, place in a baking tin and leave again for 45 minutes.
    6. Preheat oven to 180 C / Gas 4.
    7. Make a cross on the top of each bun. Bake for approximately 15 minutes, until golden brown.

    Made these to the recipe, turned out absolutely gorgeous. With extra 5 minutes in oven, Will defiantly make them again..  -  25 Mar 2013
