About this recipe: Plan ahead when making this tea bread, because you have to soak the sultanas and raisins overnight. If you like, make a double batch and freeze one of the loaves.

Makes: 1 loaf

  • 225g (1/2 lb) sultanas
  • 225g (1/2 lb) raisins
  • 300ml (1/2 pt) cold tea
  • 225g (1/2 lb) brown soft sugar
  • 225g (1/2 lb) wholemeal flour
  • 2 teaspoons baking powder
  • 1 egg

  1. In a large mixing bowl, combine the sultanas, raisins, tea and brown sugar. Leave overnight to soak.
  2. The next day preheat oven to 180 C / Gas 4.
  3. Add flour, baking powder and egg to the sultana and raisin mixture and mix well.
  4. Spoon into a greased 900g (2 lb) loaf tin and bake for about 75 minutes, or until cake tests done when a skewer is inserted in the centre.

This worked very well - it made two fair sized loaves, one to eat and one to freeze. I didn't soak the fruit overnight, as I wanted it quickly, and I used hot tea - it all worked fine. I did add a good handful of walnut pieces to give it extra oomph - of course that meant it had some fat in it! Very yummy. - 24 Jun 2013
