    About this recipe: I had bought some lamb steaks for dinner but had no idea what I was going to do with them. After lots of thought I decided to make a simple marinade and then roast in the oven with mozzarella on top. It was lovely; I served it with a bacon and rosemary potato rosti (check my othe recipes!) and savoy cabbage - it was a deliciously satisfying meal!

    Ingredients
    Serves: 2 

    • 2 tablespoons olive oil
    • 2 tablespoons balsamic vinegar
    • 1 teaspoon Very lazy garlic® or garlic granules
    • 1 pinch dried rosemary or a few fresh sprigs
    • Salt and freshly ground black pepper, to taste
    • 3 lamb steaks
    • cherry tomatoes, halved
    • 60g mozzarella, sliced

    Method
    Prep:5min  ›  Cook:15min  ›  Extra time:1hr marinating  ›  Ready in:1hr20min 

    1. Pour the olive oil and balsamic vinegar into a baking dish; mix in garlic and rosemary. Season the lamb steaks with salt and pepper then coat in marinade; toss in cherry tomatoes. Cover and chill in the fridge for at least 30 minutes.
    2. Preheat the oven to 190 C / Gas mark 5. Remove the steaks from the fridge.
    3. Remove the steaks from the fridge and bake in preheated oven, covered with foil, for about 15-30 minutes depending on how rare you like your meat. Remove the foil and place the mozzarella slices on the steaks during the last 5 minutes of cooking so it has time to melt.
