Honey and balsamic salad

    Ah, honey and balsamic vinegar are two of my favourite ingredients! I'm like Winnie the Pooh, I pretty much eat honey out the jar... so I love making my own salad dressings with honey. You can just put as much of each salad ingredient in as you like - the same goes with the dressing. The best way to get it right is to keep testing it and to add more of what you think it needs for the flavour and consistency that you want.

    Serves: 2 

    • For the salad
    • 1 head lettuce, torn
    • Handful of spincah leaves
    • 10 cherry tomatoes, sliced
    • 1/4 red onion, thinly sliced
    • 175g cooked chicken breast, sliced
    • For the dressing
    • 1 tablespoon olive oil
    • 3 tablespoons balsamic vinegar
    • 1 tablespoon runny honey
    • 1 teaspoon wholegrain mustard
    • Salt and freshly ground black pepper, to taste

    1. Simply put the salad ingredients you want in a large bowl.
    2. Whisk together the olive oil, balsamic vinegar, honey and mustard in a small bowl; season with salt and pepper.
    3. Gently toss the dressing with the salad; serve immediately.

    I just made a slight adjustment, I didnt have any wholegrain mustard so I added sweet chilli.... Really livened up my salad.  -  23 Sep 2016
