Easy mince and rice
This is one of my favourite things to cook at university. It's quite simple, and uses a lot of store-cupboard ingredients which is always handy.
Ingredients
Serves: 2
- 1 tablespoon butter
- 250g beef mince
- 1 small onion, chopped
- 2 rashers smoked bacon, chopped
- 50g mushrooms, sliced
- 100g brown rice
- 1 tin chopped tomatoes
- 1/2 beef stock cube
- 200ml water
- 1 teaspoon mixed dried herbs
- Handful of grated Cheddar cheese
- Salt and freshly ground black pepper, to taste

- Melt the butter in a large saucepan over medium heat. Cook the beef mince until brown and crumbly, about 5 minutes. Add the bacon and onions and cook until the bacon is crisp and the onion tender, about 10 minutes.
- Stir in the mushrooms and rice until well combined. Pour in the chopped tomatoes, beef stock cube and water. Season with mixed dried herbs, salt and pepper.
- Bring to the boil, then reduce the temperature to a simmer. Cover and cook until the rice is cooked and the liquid is absorbed, about 20 minutes. Serve with grated cheese.

I didn't have bacon or mushrooms but I did have spinach so I added that in the end. it is lovely.. even without the cheese! - 24 Jan 2016
